Veganuary being the hype of the moment, a tasty hummus hits the spot perfectly. Hummus is probably THE food staple of vegans and vegetarians, being rich in plant-based proteins, vitamins, minerals and being readily available.
The beauty of hummus is that there are an endless variety of beans you can use (chickpeas, cannellini beans, lentils…), flavours you can add (pesto, beetroot, caramelised onions…) and even the toppings you can choose (lamb, nuts, cheese, grilled vegetables…)! I’ve created a simple ‘Roasted Red Pepper Hummus’, as red peppers are high in vitamin C and because they add a bit of sunshine to our plate which is very much needed at this time of the year.

Dishes you can prepare in advance are literally life savers during the holiday season or if hosting a dinner party – unfortunately rather the exception at the moment. The beauty of this ‘Smoked Salmon Paté’ is that it works on any occasion: serve it as a canapé on blinis or crackers, a starter or for lunch accompanied by a green salad and some crusty bread. And…it only takes about 5-10 min so what’s not to love?

What is cookie perfection for you? Does it sound like: crispy on the outside, fabulously chewy on the inside? Maybe with a decadent amount of chocolate? I mean…let’s face it…cookies should be naughty. They should make you feel like you have sinned but it just feels so good that you don’t feel guilty about it. Well…these cookies will literally give you a first class ticket to Nirvana. In fact, the day I created them I danced around in pure happiness as I was so thrilled about this cookie perfection….I was in awe…on the other hand…it might just have been the sugar rush…who cares. 😉
Having baked and bought a huge amount of cookies in the last few years (thank you 2 pregnancies!!!), Mr B and I have come to the conclusion, that my ‘Chocolate Nirvana Cookies’ are pretty much at the top. Try them…you won’t regret it.
